HOW TO MAKE TIGERNUT, DATES AND COCONUT DRINK

Ingredients

  1. Dry coconut                    100 grams
  2. Dates                               150 grams
  3. Tigernuts                         200 grams
  4. Ginger                             5 grams
  5. Water                               1.5 kilos


Process

  1. Soak your Dates and Tigernut in water for about 10 minutes. You can soak it overnight if the tigernut and the dates are too hard
  2. Now wash it and then put in your blender
  3. Blend until smooth 
  4. Sieve out the chaff to get the juice
  5. You can add citric acid (1%) and even other preservative
  6. Pour into your glass jar and keep in your refrigerator
  7. You are done!

HOW TO MAKE WHITE VINEGAR

 


Vinegar is used for many purposes in the home and the catering industry. In the home, vinegar is used to wash vegetables and other leafy vegetables like cabbage and lettuce. Preparing vinegar will not take you 10 minutes if you have the ingredients available to you.

 

Ingredients

  1. Acetic acid                              100
  2. Water                                      1.5 liters
  3. Citric acid (optional)               20 grams

 

Process

  1. Clean your saucepan or bowl and also wash your bottles for packaging.
  2. Put your water on the fire and allow it to boil for about 5 minutes
  3. Bring it down from the fire and allow it to cool down a bit
  4. Add your acetic acid to it and stir very well
  5. Now add your citric acid to balance the pH of your vinegar
  6. Stir and let it cool down before you bottle
  7. You are done!

HOW TO MAKE PINEAPPLE JUICE AT HOME

 

As I have mentioned in my earlier post, I am not a catering prof but I really love cooking. Well maybe I am a prof in my kitchen. lol. Today, I want to share with you how I prepare pineapple juice for the family. It is quite simple and natural, no addictive. But as I have said and as it is the motive of our organization to create job opportunities for the youth around the world, this recipe can be used to make business. Ingredients

We are going to use just 3 ingredients to make our pineapple juice. But if you think you can add some other ingredients, sure you can because you might be creating something new. Sugar is optional.

  1. Pineapple                         1 big size
  2. Lemon                             1 big size
  3. Ginger                             A small piece - Actually the ginger quantity will depend on how you want it
  4. Sugar                             Optional

 

Process.

Step 1

Wash and peel you pineapple. After peeling slice them into piece, add the ginger and then use a blender to blend it. There are some device that can be used to squeeze the juice out of the pineapple but hey if you don't have those devices or machines, kindly use your blender. It works perfectly well.

Step 2 

Using a cheesecloth or anything that can help you to squeeze out the juice leaving the fiber or chaff. I prefer the cloth used to sieve hausa koko. It works well for me. But if you don't have it, you can even use a fresh kitchen napkin to do the juicing.

Step 3

Add your lemon to the juice for taste. It is completely optional but you can add it to get a little sourness in your juice to make it very tasty. If you want sugar, you can add it at this stage.

Step 4

You are done preparing your pineapple juice. Freeze and then serve!

HOW TO MAKE FRESH YOGHURT WITHOUT STARTER CULTURE

 

Fresh yoghurt making is quite complicated. There are various articles on the internet making it seems that yoghurt making is quite simple. The assertion that yoghurt making is simple may be true depending the equipment available to them. This article is not to debunk the assertion that yoghurt making simple. However, this article seeks to provide you with the method and process to making fresh yoghurt that we know and have been working with. If followed careful, you should be able to produce fresh yoghurt without any complication which will point to the fact that, yoghurt making is simple...LOL

Ingredient

  1. Milk powder                      370 grams
  2. Liquid Starter Culture       200 ml
  3. Sugar                                 150 grams
  4. Flavor                               To your taste
  5. Food Color                       To your taste

 Process

Our method of making yoghurt is quite simple on the outside but it is also complicated as it could turn out to be fine or the other way round. However, if you follow the steps outlined below, you should make yoghurt without any problem.

Step 1

Measure your milk powder and pour into your bowl and add water. There are various brands of milk powder and in Ghana, the most noted ones for yoghurt making are DANO, MILAC and LP.
After adding the water, mix well with your whisk.

 Step 2

Add hot water to the mixture in step 1 and ensure that the temperature is around 40 degree celcius. You could check the temperature with your finger by dipping your index finger into it and then start to count 1 through to 14. But seriously you should get a themometer.

Step 3

After getting the 40 degree celcius, add your liquid starter culture to it and then cover it and incubate it for 12 hours. This is where the problem has always been for those who do not have the incubation machine. Cover the bowl with something that could retain the heat throughout the incubation period.

 Step 4

After 12 hours, your yoghurt should cuddle. When you see that, you should add your sugar and flavors as well as the food color. Bottle and refrigerate. Done.

HOW TO MAKE ASANA OR ELEWONWO WITH MILLET


 

Asana is a traditional drink among the Ewe people of Ghana. It is one of the favorite local drinks in Ghana. Among the Ewe people of Ghana, Asana is prepared using maize. However, there has been recent ingredients to prepare Asana and get the same results as that of the maize only drink. This article provides you with the step by step approach to preparing Asana using millet.

INGREDIENTS

As stated earlier, Asana was originally prepared with maize. This recipe uses maize together with millet to prepare the Asana.

1.      Millet                           2 cups

2.      Corn doe                     200 grams

3.      Sugar                           To taste

4.      Caramel                       To taste

PROCESS

1.      Soak your millet in water and leave it overnight.

2.      The next day, the drain the water, wash it and mill it.

3.      After milling, sieve it and then allow it to settle – Better still leave it overnight.

4.      After settling, drain the water and boil it.

5.      Prepare your corn doe to make your corn porridge.

6.      Add your caramel, sugar and corn porridge to the boil millet water.

7.      Sieve it and you are done.

HOW TO MAKE ATADWE MILK AT HOME


Tiger-nuts are very nutritious nuts for all and as such it is important to include this nutritious nuts in our diet. This article provide a simple process to using the tiger-nuts and rice to prepare food particularly porridge and snack for the family in the house.

RECIPE
1. Tiger-nuts            2 cups

2. Rice                     1 cup

3. Sugar                    To taste

 

The ratio of tiger-nuts to rice can be done the other way round. That is two cups of rice and one cup of tiger-nuts.

PROCESS

1. Soak the tiger-nuts and rice in separate bowls for about 5 hours. This should help with the blending of the rice and tiger-nuts. It can also be soaked overnight.

2. After 5 hours or a day, blend the rice and tiger-nut together in a blender or in a corn-mill.

3. Use cheesecloth or any other means to sieve the chaff from the milk and put on fire.

4. After preparing, add your caramel to it to change the color. You can choose to leave the caramel out of it.

5. Pour into your cups and serve with milk of choice.
