HOW TO MAKE FRESH YOGHURT WITHOUT STARTER CULTURE

 

Fresh yoghurt making is quite complicated. There are various articles on the internet making it seems that yoghurt making is quite simple. The assertion that yoghurt making is simple may be true depending the equipment available to them. This article is not to debunk the assertion that yoghurt making simple. However, this article seeks to provide you with the method and process to making fresh yoghurt that we know and have been working with. If followed careful, you should be able to produce fresh yoghurt without any complication which will point to the fact that, yoghurt making is simple...LOL

Ingredient

  1. Milk powder                      370 grams
  2. Liquid Starter Culture       200 ml
  3. Sugar                                 150 grams
  4. Flavor                               To your taste
  5. Food Color                       To your taste

 Process

Our method of making yoghurt is quite simple on the outside but it is also complicated as it could turn out to be fine or the other way round. However, if you follow the steps outlined below, you should make yoghurt without any problem.

Step 1

Measure your milk powder and pour into your bowl and add water. There are various brands of milk powder and in Ghana, the most noted ones for yoghurt making are DANO, MILAC and LP.
After adding the water, mix well with your whisk.

 Step 2

Add hot water to the mixture in step 1 and ensure that the temperature is around 40 degree celcius. You could check the temperature with your finger by dipping your index finger into it and then start to count 1 through to 14. But seriously you should get a themometer.

Step 3

After getting the 40 degree celcius, add your liquid starter culture to it and then cover it and incubate it for 12 hours. This is where the problem has always been for those who do not have the incubation machine. Cover the bowl with something that could retain the heat throughout the incubation period.

 Step 4

After 12 hours, your yoghurt should cuddle. When you see that, you should add your sugar and flavors as well as the food color. Bottle and refrigerate. Done.
